United Airlines will launch a new era of inflight dining on 1 August, introducing chef‑curated menus developed in collaboration with Chef’s Table, the creative brand behind the Emmy‑winning Netflix series. The partnership brings a rotating collection of multi‑course meals to United Polaris® international business class on select long‑haul routes.

The programme features dishes designed by 11 globally recognised chefs from four continents, including culinary figures such as Nancy Silverton (Los Angeles), Jenner Tomaska (Chicago) and Tomos Parry (London). Each menu reflects the chef’s home‑city identity and includes an appetizer, salad and entrée tailored specifically for the inflight environment.

The collaboration also extends to United’s inflight entertainment system, which will feature exclusive behind‑the‑scenes content documenting how the chefs and United’s culinary teams developed the dishes.

Aaron McMillan, United’s managing director of hospitality programmes, said the partnership aims to elevate expectations of inflight dining: “At its core, this collaboration with Chef’s Table is rooted in a shared ambition to redefine what inflight dining can be. We’re able to work hand‑in‑hand with world‑class chefs and translate their points of view into dishes intentionally designed for the realities of travel and inspired by destinations we serve.”

The menus span a wide range of global influences — from seasonal California cooking and modern American fine dining to contemporary European technique and bold interpretations of Asian and Latin American cuisine.

Justin Connor, president of Chef’s Table Projects, said the partnership brings a new level of culinary storytelling to the cabin: “Our 11 featured chefs have crafted menus specifically engineered for 35,000 feet, ensuring ingredients and flavours remain exceptional despite the altitude. By pairing these signature dishes with exclusive behind‑the‑scenes content, passengers can discover the personal stories and creative journey behind their meal right as they are enjoying it.”

The new dishes will roll out progressively across select Polaris routes beginning in August.
