Cuisine Solutions, the sous vide manufacturer, will showcase its selection of on-board dining, snacks and lounge meals for breakfast and lunch at the International Flight Services Association (IFSA) Expo, taking place on 19 to 21 September 2023.

Its breakfast selection will include bruschetta squares, vegetable frittatas and portable blue berry oatmeal bites.

Its lunch offerings will include bee burnt ends mini tacos with pickled watermelon radish; stuffed salmon with aubergine caviar and chardonnay sauce; grilled pork chops with semolina-vegetable and brown butter sauce; sliced turkey roll ups with Ancho Chile aioli, arugula, cheddar cheese and pickled carrots; and crab cakes with celeriac slaw, green apples, Old Bay-Massaman and cilantro.

Led by Chef Gerard Bertholon, Chief Strategy Officer, Cuisine Solutions, the sous vide company works with airlines’ culinary departments to develop menus while reducing labour and food costs; decreasing produce waste; creating a safer environment; and increasing yield.

Additionally, Cuisine Solutions offers a bespoke service, training individuals on how to prepare and manage sous vide products by offering fully cooked restaurant-quality entrees, side dishes and sauces.
